Well, it’s all very well talking about Eggs Benedict but it now seems remiss to have missed out a picture of the said delicacy…
The only question is, should it have been to show the poached egg in its entirety or with the egg broken open? Oooh decisions decisions…
Actually there is another question. How did Eggs Benedict get its name?
There appear to be several versions. The most popular is that in 1894 wealthy banker Mr Lemeul Benedict walked into the Waldorf in New York, and ordered buttered toast, poached eggs, crisp bacon, and a hooker of hollandaise as a cure for his hangover. The Maitre D’ was so impressed with the idea that he put it on the menu, swapping the bacon and the toast for ham and muffins.
But we ‘re with Lemeul on this one, so we’ve swapped it back… and added tomatoes with it by way of contrast.
Either way it really is delicious!
